You should use about 4 gallons of water. The 5 gallon capacity on the black bucket is hindered by the fact that it has a 6" net pot lid which takes away some of the water capacity. Four gallons should suffice

You can use any nutrient line that you like. For small herbs, however, you don't need much. They can make it pretty easily with a low ppm level. For flowering plants they may need a higher level ppm.
